The Role of the Dental Health Care Professional in Pediatric Nutrition and Oral Health Care for Food Allergic Children:

This interactive, interprofessional session will be presented by a pediatric dentist and a nutritionist. Recent evidence-based scientific research reveals that diet is critical to optimal oral health in the pediatric food allergic and food intolerant patient. This Power Point presentation will enable dentists and hygienists to understand the bi-directional relationship between diet and oral health in children with food allergy and intolerance. The role of specific nutrients in the child's diet and its link to the oral microbiome will be discussed. Dental health care professionals will gain the knowledge and resources needed to promote optimum oral health care for their pediatric food allergic patients and their families.

Learning objectives/outcomes:
• Delineate the differences between food allergy and food intolerance in the pediatric dental patient.
• Identify the role of the dentist and dental hygienist in recognizing common oral health conditions in pediatric patients with food allergy.
• Define an evidence-based nutritional approach to promote and prevent pediatric oral disease in children with food allergy.
• Discuss limiting calories from added sugars, while substituting nutrient-dense foods, in order to promote optimal oral health in food allergic children.

Ellen Karlin

Ellen Karlin, MMSc, RD, LDN, FADA

Ellen Karlin, a nutrition consultant with vast professional knowledge and expertise in food allergy and intolerance, has worked at the Comprehensive Asthma and Allergy Center in Maryland for the past 32 years. She has also served as a nutrition consultant to dentists in Owings Mills, MD for the past 30 years. Ellen holds a Master of Medical Science degree from Emory University. A popular speaker, she has delivered numerous food allergy lectures at nutrition, dietetic, dental, dental hygiene and nurse practitioner conferences throughout the United States. She was the technical reviewer for the Academy of Nutrition and Dietetics (ADA) publication “Food Allergy” and presented an ADA teleseminar “Food Allergies and the New Labeling Law”. She is author for the Food Allergy section in ADA’s 2009 Nutrition Care Manual and lead technical reviewer for the Food Allergy section in ADA’s 2010 and The Academy of Nutrition and Dietetics’ 2013 Pediatric Nutrition Care Manuals. She was the technical reviewer for the chapter on food sensitivities for the 2012 ADA Complete Food and Nutrition Guide. She is the co-author of “Oral and Dental Manifestations of Pediatric Celiac Disease”, published in May, 2016 Journal of Pediatric Dentistry, and has contributed to many other resources.

Sara Karlin

Sara Karlin, DDS

Dr. Sara Karlin is a pediatric dentist currently working in New Jersey. She received her Bachelor of Science degree from the University of Maryland, College Park and completed her D.D.S. at the University of Maryland School of Dentistry. Dr. Karlin pursued her specialty training at New York University and Bellevue Hospital Center, earning a certificate in Pediatric Dentistry. Her comprehensive treatment plans include nutritional assessments and guidance related to optimal oral health care. Dr. Karlin is a member of the American Academy of Pediatric Dentistry, the American Dental Association, and the New York County Dental Society. In June, she was on a panel discussing interprofessional collaboration, at the American Dental Hygienists’ Association 2019 annual conference in Louisville, KY. Dr. Karlin co-presented a nutrition and pediatric oral health session at the New York County Dental Society meeting in August 2019 and presented this course at the Maryland Dental Hygiene Association annual meeting in October 2019. She is the primary author of “Oral and Dental Manifestations in Pediatric Dentistry” and has contributed to a variety of other resources.
